Wait - can you explain the argument as to how a cloud kitchen setup doesn't change the margins for a restaurant business?
Especially for ones that own their own customer (like a sweetgreen or dig inn) but can't manage supply spikes for to-go in certain areas?
I feel this could be said of many startups
